Today I have a (sort of) healthy summer treat for you! Recently I've been trying to eat healthier, because I'm still not happy with how I feel. My weakest area in this has been snacks. If unhealthy snacks are in the house, I feel compelled to eat them. Then once I eat them, I feel compelled to eat other unhealthy things. I've noticed that direct correlation in myself: when you eat junk you crave junk, when you eat healthy you crave healthy. So in trying to find a sweet, cool snack for summer, I thought of these babies: chocolate covered banana bites. I'm not a huge dark chocolate fan, so I use semi-sweet chips but you could easily switch to a good dark chocolate and this would be pretty dang good for you, and vegan/dairy-free! Keeping these in the freezer makes them like little chocolate covered ice cream bites, perfect for summer.
To start, cut your banana into 1/2 inch pieces. Place on a freezer safe plate, cover with plastic wrap and freeze overnight or for several hours.
Mix chocolate chips and coconut oil in a microwave safe bowl and heat for 15 second intervals, stirring in between. The short time spans are important so you don't ruin the chocolate. The coconut oil helps the chocolate stay hardened at room temperature and makes a great consistency for dipping.
Once completely melted, remove bananas from the freezer. It's important to wait until you're completely ready to dip them so they stay cold, otherwise they may fall apart during the dipping process. Stick each banana bite with a toothpick and dip into chocolate coating completely. You may also use a fork instead if you prefer. Depending on how large your batch is, you may need to reheat the chocolate during the dipping process.
Once the banana is completely coated, transfer to a piece of parchment paper to dry. This shouldn't take long at all, just a couple of minutes. Store any leftovers in the freezer.
Frozen Chocolate Covered Banana Bites
Ingredients:
- 2 bananas
- 1 1/2 cups of semi-sweet chips
- 3 tbs of coconut oil
Directions:
- Cut bananas into 1/2" pieces. Cover with plastic wrap and freeze overnight.
- Melt chocolate and coconut oil in the microwave, heating at 15 second intervals. Stir in between.
- Dip bananas in chocolate and let dry on parchment paper.
