I've mentioned previously that I changed my diet drastically a few weeks after going gluten-free. One of the first changes I committed to was to make a simple meat and veggie dinner every week. At first it was an attempt to cut down on eating heavy, or processed foods too often. But, I developed this meal and it's not only become very convenient, but VERY tasty. We've been eating this once a week for several weeks and haven't grown tired of it because it's that good. Not only that, but it's really convenient on busy days. This makes a filling meal for 2 people.
Start by cutting 1.25 lbs of clean red potatoes into bite sized pieces. Put them in a gallon bag with melted butter, lemon concentrate, and seasonings. Close bag and mix ingredients together thoroughly. Transfer to a greased, microwave-safe dish. Make sure you get most of the liquid in the dish, or the potatoes may be too dry. Microwave for 15 minutes, mixing every 5 minutes, until tender. Garnish with cheese, if desired.
Meanwhile, start on the tilapia. Melt butter in a pan, then add (frozen) tilapia. Apply seasonings generously and cook for about 6 minutes or until underside is crispy. Flip over, apply seasonings again and cook another 6 minutes, until crispy and cooked through (and the potatoes are done). The spices create a nice, crispy, flavorful coating, so don't skimp!
Tilapia & Red Potatoes
Ingredients
- 1.25 lbs. potatoes
- 1.5 tbs. lemon concentrate
- 2 tbs. melted butter
- 1/2 tsp. salt
- 1/8 tsp. black pepper
- 1/4 tsp onion powder
- 1 tsp. parsley
- 1 pinch sage
- 1 pinch poultry seasoning
- 1 clove garlic (minced)

- 2x 5 oz. tilapia filets
- 1 heaping tbs. butter
- 1 tsp. onion powder (per side of each filet)
- 1 tsp. garlic powder (per side of each filet)
- 1/2 tsp. parsley (per side of each filet)
- salt to taste (per filet)
Directions
- Wash and cut the potatoes into bite sized pieces.
- Mix in a gallon bag with lemon, butter, and seasonings.
- Transfer contents of bag to a greased, microwave-safe dish and microwave for 15 minutes, stirring every 5 minutes.
- Meanwhile, melt butter in a pan. Add (frozen) tilapia. Apply seasonings and cook for 6 minutes. Flip, season again and cook another 6 minutes.
I know this is a very simple recipe, but it's so convenient and yummy, and we make it every week without fail, that I figured it made even *more* sense to share it with you. Enjoy! :)
