Vegan Quesadillas

Vegan Quesadillas

Recently I've been experimenting with going dairy-free. Long story short: I react VERY poorly to carrageenan so that didn't last long. Anyway, it was pretty hard. For me, cheese was one of the most disappointing offerings of the dairy-free market. But then I found the Daiya Havarti Garlic & Jalapeño Wedge. It tasted way better than the other cheeses I had tried and melted fantastically (where others failed). I knew instantly what to make with it. And this is what I came up with. The avocado balances the spiciness of the "cheese" really well making the simplicity of the ingredients work. It's quick, easy, and really yummy.

Vegan Quesadillas

The ingredients are very simple. You need 4 GF tortillas, olive oil, an avocado, and a Daiya Havarti wedge.

You start by cutting the avocado into cubes and blending with 1 tbs. of olive oil. I blended mine in my Magic Bullet. It took some stirring between blending, but just blend it until it is smooth.

Then you blend even amounts (one-fourth each) of the avocado on one half of each tortilla. Then put even amounts (one-fourth each) of the "cheese," split into small pieces, on the same half of each tortilla. Season with salt and pepper.

Fold the tortilla in half, like shown. Then transfer to a warm frying pan. You can cook two at a time. Cook for a 2 minutes, then flip and cook for another 2 minutes. Just enough to make the tortilla crispy and for the "cheese" to melt.

Ingredients



  • 4 GF tortillas

  • 1 avocado

  • 1 Tbs. olive oil

  • 4 oz. (one half of the package) Daiya havarti wedge


 

Directions



  1. Cut the avocado into small pieces. Blend with 1 tbs. of olive oil until smooth.

  2. Spread 1/4 of avocado mixture on each tortilla, on one half only. Spread 1/4 of "cheese," split into small pieces, on each tortilla. Season with salt and pepper.

  3. Fold tortilla in half, and transfer to frying pan. Cook each side for 2 minutes until tortilla is crispy and "cheese" is melted.


 

The fun things about basic recipes like this is that you can add things to suit your preferences. My fiancé adds sriracha sauce to his, and I think mushrooms would be a good addition.  It's all up to you! Let me know in the comments what your extras are. Enjoy. :)
